KETO Chocolate Chip Chaffles
Since quarantine began, I fell off my Keto diet (you know - quarantine snacks). But now that we're getting into the swing of things, I decided to give it another shot. So, I started back up this week, and then, a chocolate craving hit! Dun Dun Dunnnnnn. But luckily, I still had some Lily's Baking Chips (Stevia Sweetened Chocolate Chips), and all of the ingredients that can create a quick chocolate chip waff... I mean CHAFFLE (cheese waffle)! Find out how to make yours below!
The base for any "Chaffle" is very simple! All you need is 1 cup of Shredded Cheese (mozzarella is a mild base for a great, normal waffle alternative - cheddar if you want something a little more savory), 1oz of Softened Cream Cheese and 1 Egg. For this particular recipe, I decided to add in a teaspoon of vanilla to sweeten it up and a tablespoon of Lily's Baking Chips. I also have this adorable "Eggo-sized" mini waffle iron, but you can use a regular sized one as well.
Then, you put all of the ingredients (hold the chocolate chips) into a blender and blend. It will take several minutes and possibly a few times of scraping down the ingredients to get it all to blend well.
If it is too thick (I think using finely shredded cheese was my downfall - better to stick with regular or thick sized shreds), you can add a tiny bit of Unsweetened Almond Milk to give your batter some moisture to blend better - don't add too much or your chaffles won't fluff up.
You want your batter the consistency of a well... waffle/pancake batter.
Since I'm adding in extra ingredients that I don't want chopped up, I put my batter into a bowl and mixed in my Chocolate Chips.
I sprayed the top and bottom of my waffle iron with some Coconut Oil cooking spray...
Put my batter onto the iron and cooked for 5 minutes. It may smell like it's burning - and you might think you're ruining your waffle iron because you're basically cooking cheese. But DO NOT open early. I've made that mistake and it did get stuck all over the iron and it was horrible to have to try to clean off. Stick the the 5 minute mark and you'll be safe.
Once your Chocolate Chip Chaffles are done, top with some butter, add some sugar-free syrup and enjoy! It's a quick and easy little grab and go breakfast and adding in the Chocolate Chips really helps hit any sweet tooth cravings!
1 Cup Shredded Mozzarella Cheese
1 oz Cream Cheese (softened in the microwave for about 10 seconds)
1 tsp Vanilla Extract
1 tbsp No Sugar Added Chocolate Chips
Begin heating your waffle iron.
Add all of your ingredients into a blender/food processor.
Blend until it turns into a waffle/pancake batter consistency, scraping down the sides of the blender as needed. Also if needed, add a tiny bit of Unsweetened Almond Milk.
Add batter to a small bowl and stir in Chocolate Chips.
Add a couple spoonfuls of the batter to a waffle iron that has been sprayed with a coconut or avocado oil cooking spray.
Close waffle iron and cook for 5 minutes.
