Low Carb Pumpkin Pecan Bread
I'm a part of our local MOPS chapter, and we were about to have a low attendance meeting. Every week, a table of ladies are assigned to bring the food to share. The table that was supposed to bring food this week was mostly going to be gone, so the leadership team (which includes moi) was asked to help bring food for everyone).
For the last week, I have been ON POINT with my Keto - bout it's a lot of temptation when you go to those meetings and there's so much yummy food. I knew I needed to make something that I could enjoy - and that everyone else could too. So, I knew I wanted it to be low carb. I decided to make this SUPER yummy and moist Pumpkin Pecan Bread, and I'm happy that I did, because it won our meeting's "Golden Spoon Award" for favorite recipe of the bunch! Here's how you can enjoy it too!
Gather your ingredients to include Almond Flour, Swerve, Pureed Pumpkin, Pumpkin Spice, Eggs, Liquid Stevia, Butter (Melted), Vanilla Extract, Salt and Pecans.
Simply put all ingredients in a bowl and mix it up. You can use a hand mixer, whisk, stand mixer, food processor... just as long as it all gets mixed up into a smooth batter consistency. Please note: I had to light my Pumpkin Spice and Warm Apple Pie candles to set the mood lol.
Pour the batter into an 8x4 loaf dish.
Top with pecan halves. Now, you could get some chopped pecans and throw them in the batter, but I know some people aren't a fan of nuts in their bread, so I wanted to keep it simple for people to take them off if they didn't like it. When I make this again, I'll be throwing those chopped pecans in my bread.
Now, it's time to put your bread in a 350º oven for 45-60 minutes!
CAUTION: If you are making this at 5am like I was... and you have family members asleep in their rooms... they will smell this and start waking up and come in the kitchen and think it's for them and want some...
6 Large Eggs
1 1/2 Cup Almond Flour
9 Tbsp Pumpkin Puree
2 tsp Pumpkin Pie Spice
3 Tbsp Swerve (Erithrytol Sweetener)
1 tsp Vanilla Extract
6 Tbsp Butter (Melted)
45 Drops Liquid Stevia
1 tsp Salt
Pecans Halves (you can get chopped pecans and add it into the batter and on top as well)
Preheat oven to 350º
Combine all ingredients other than pecans in a bowl. Mix with a stand mixer or hand mixer (If you're adding chopped pecans, add after mixing and gently fold in with a spatula.)
Pour the mixture into an 8x4 loaf dish prepared with a cooking spray.
Top with pecan halves.
Bake for 45-60 minutes (or until a toothpick comes out clean after sticking it in the middle) at 350º.
Remove from oven and allow to cool for 10 minutes.
